S&S Acres stands for Stitches and Staples — surgery on one side, ranching on the other. Weekdays, Dr. Jason Bowersock is a board-certified general surgeon in Lima, Ohio. Evenings and weekends, it’s fencelines, feed runs, and herd checks — the fifth generation of his family farming Ohio ground. From the OR to the pasture, the standard doesn’t change.

The jerky is the newest program. The herd behind it is the bigger story — and it runs under four named bulls.

The rare blonde-cream-white bull, ~4 years old.

Snowflake anchors our rare-phenotype breeding program within Tonka MD's bison domain. Honest framing — no purity claims. He runs in a brucellosis-negative, tuberculosis-negative herd alongside two mature white cows and four white yearling daughters of Thor, our previous white bull. Antlered.
Elk and red stag. The growth lane.

Hurricane — our named LL-genotype breeding bull and the anchor of the elk program today. CWD-clean herd since inception, most recently tested February 2026.

Inferno — the legacy foundation sire who technically started everything. He sold in 2025, but his LM-genotype semen lives on via State Line Cryogenics, the genetic complement we cross with Hurricane to build the next generation.

Gizmo — the named red stag and the foundation of our growing red deer program within the antlered lane.

Rawhide — an Inferno son coming up through the program, the line carrying forward in real time.

Our animals are homegrown — raised on our own pasture in Lima, Ohio. When bison comes off our pasture, it's processed at 3D Meats in Dalton, Ohio, then goes to our USDA-inspected co-pack partner for jerky production.

When demand outpaces our herd, we source from trusted U.S. ranch partners — pasture-raised, never feedlot, under the same principles. Either way it's American bison, US-raised, USDA-inspected.

Bison is the first jerky line. Elk is next, with yak and Highland beef to follow — one program at a time, each from animals raised the same way.

Dr. Jason Bowersock is a board-certified general surgeon at Mercy Health Saint Rita's Medical Center in Lima, Ohio — and a fifth-generation farm kid who never left the land. The name says it: S&S Acres — Stitches and Staples. Surgery on one side, ranching on the other.

The family acquired this land in 2010. The ranch itself began in 2016 with the first bison, and has grown to carry a four-mascot exotic livestock portfolio — bison, elk and red deer, Highland and Watusi cattle, and yak — alongside the Tonka Bison Jerky line.

Family

Five Generations.
One Working Ranch.

S&S Acres is its own ranch within a farming family. Stephanie (wife). Cooper (youngest son), Delanie (daughter), Kalob (oldest son). Jason's dad farms the traditional family piece — crops, cattle, pigs — with his brother running the day-to-day there. Jason's mom is in everything they built; she passed last year, and the place still carries her. Five generations of Ohio farming behind it all.
